So my wife is having a birthday and asked me to make my Perfect New York Cheese Cake. I thought it would be a great chance to share with the world one of my favorite desserts, cheesecake.

Cheesecake

Cheesecake is a sweet dessert consisting of one or more layers. The main, and thickest, layer consists of a mixture of a soft, fresh cheese (typically cottage cheesecream cheese or ricotta), eggs, and sugar. If there is a bottom layer, it most often consists of a crust or base made from crushed cookies (or digestive biscuits), graham crackerspastry, or sometimes sponge cake.[1] Cheesecake may be baked or unbaked (and is usually refrigerated).

Cheesecake is usually sweetened with sugar and may be flavored in different ways. Vanillaspiceslemonchocolatepumpkin, or other flavors may be added to the main cheese layer. Additional flavors and visual appeal may be added by topping the finished dessert with fruitwhipped creamnuts, cookies, fruit saucechocolate syrup, or other ingredients.

New York–style cheesecake uses a cream cheese base, also incorporating heavy cream or sour cream.[24] The typical New York cheesecake is rich and has a dense, smooth, and creamy consistency.[25] Sour cream makes the cheesecake more resilient to freezing and is the method by which most frozen cheesecakes are made. However, a lavish variant uses sour cream as a topping, applied when the cheesecake is cooked. It is mixed with vanilla extract and sugar and replaced in the oven, essentially making the cheesecake twice-baked.

Here are the ingredients:

FOR THE CRUST
2 cup graham cracker crumbs - about 15 sheets
2 tbsp granulated sugar
pinch salt
5 tbsp butter - melted

FOR THE FILLING
4 (8 oz) blocks plain cream cheese - room temperature
1/4 tsp salt
1 tbsp vanilla extract
1 1/2 cup granulated sugar
4 eggs - room temperature
2/3 cup sour cream - room temperature
2/3 cup heavy whipping cream - room temperature

FOR THE SOUR CREAM TOPPING
1 1/2 cup sour cream
1/4 cup powdered sugar
1 tsp vanilla bean paste
