Ingredients For the pork marinade:
• 16 ounces boneless pork shoulder or loin (225g, cut into thin strips about 1½-inches long)
• 3 teaspoons cornstarch
• 6 tablespoons water
• 0.25 teaspoon sugar
• 4 teaspoons Shaoxing wine
• 2 tablespoon light soy sauce
For the rest of the dish:
• 6 tablespoons oil (divided)
• 2 tablespoon ginger (minced)
• 2 teaspoon garlic (minced)
• 2 medium carrot (julienned)
• 1 cup red bell pepper (julienned)
• 16 ounces spiced bean curd (225g, julienned)
• 6 scallions (cut into large pieces)
• 1 teaspoon dark soy sauce
• 0.5 teaspoon sugar
• 2 teaspoon sesame oil
• 2 tablespoon water
• Salt (to taste)
