One of my all time favorite snacks while living in Taiwan was something called a Flaky Chinese Scallion Pancake with egg. These crispy fried flat breads are a staple in the country. Light and flaky, this snack is sure to hit the spot for those tummy grumbles.

Cong you bing (cōngyóubǐng)[1] (simplified Chinese葱油饼traditional Chinese蔥油餅pinyincōngyóubǐnglit. ‘scallion oil pancake’; Mandarin pronunciation [tsʰʊ́ŋjǒupìŋ]), also known as scallion pancake or “green onion pancake” is a Chinesesavoryunleavened flatbread folded with oil and minced scallions (green onions). Unlike Western pancakes, it is made from dough instead of batter. It is pan-fried which gives it crisp edges yet also a chewy texture. A unique characteristic of scallion pancakes is the many layers that make up the interior, which help contribute to its chewy texture.[2] Variations exist on the basic method of preparation that incorporate other flavors and fillings.

Scallion pancakes are served both as a street food item and as a restaurant dish. They are also sold commercially, either fresh or frozen in plastic packages (often in Asian supermarkets).

Other ingredients, such as chopped fennel greens and sesame seeds are sometimes added with the green onions.

When using garlic chives (jiucai), these pancakes are called jiucai bing (韭菜饼) or jiucai you bing (韭菜油饼).

In Taiwanese cuisineegg pancakes (蛋餅) are sauteed with egg coated on one side and the dough is thinner and moister.[citation needed]

In North America, the pancakes are often served with soy sauce, hot chili sauce, or Vietnamese dipping sauce.

Ingredients:
10 ounces [283 grams] of all-purpose flour
7 ounces [198 grams] of warm water
1 tsp of salt or to taste
2 tbsp. of all-purpose flour
1 tsp of black pepper
1/4 cup of vegetable oil
Some green onion

**HOW TO SAVE IT**
– Wrap it with plastic film before frying and put it in a sealable bag. It will last 30 days in the freezer. Whenever you want to eat them again. Take it out, don’t need to defrost. Just directly pan fry it. Now I am going to show you how to do this.
